This potato side dish goes with pretty much anything. Bursting with flavour and – if you want – chilli heat. We often make them to go with the Mushroom and Courgette Gratin recipe also in our recipe section. Best made with floury potatoes such as Desiree, Estima, King Edward or Maris Piper.

This recipe started off as saag paneer (spinach with paneer cheese) but I removed the cheese to make it healthier and think it is tasty enough as it is. This Indian dish can be used as an accompaniment to curry or served as a main course with rice and / or naan bread.

When we think of curry we do not automatically think of South Africa. The fact this curry originates from Durban reflects the fact that there are an estimated 1.3 million people of Indian origin living in South Africa, most of who live in and around Durban, which was dubbed ‘the largest ‘Indian’ city outside of India’ by The Times of India. This curry is tasty and relatively easy and having made it lots of times I tend to experiment and add different ingredients such as fenugreek to see how it affects the taste. Serves about 4 depending how greedy you are.

Yuk Sung is one of my favourite Chinese restaurant starters. A healthy and flavoursome dish served wrapped in lettuce leaves. The original dish uses minced pork but you can use minced chicken, Quorn mince or Soya mince as you wish.

Until the late 18th century, pork was not used much in Indian cooking. Although most of the country was Hindu, and consumption of pork was not barred, a large proportion of the population was vegetarian. It was only in Anglo-Indian cooking and in the hills in the eastern part of the country that pork was consumed. This recipe originates from Darjeeling, a hill station very popular with the British when they lived in India. The term bhooni refers to the dry, almost coating consistency of the spices that remain on the pork chops when the dish is finished.

Nothing encapsulates the taste of summer more that the unique taste of Pimms. Although Eton Mess is traditionally made with strawberries, raspberries have more of a tang, this combined with the Pimms gives our version a more “grown up” taste.

1 tin of 5 bean salad (drain and rinse)
tin of sweet corn
half a chopped red onion
Cherry tomatoes
1 red pepper
Fresh coriander chopped
Fresh lemon juice , Balsamic vinegar, Olive oil
Preparation
Drain and rinse the tin of 5 bean salad
Add the sweetcorn, onion tomatoes & pepper & mix together
Squeeze fresh lemon juice, balsamic vinegar and drizzle of olive oil over salad and serve

Cómpeta is famous for its sweet muscatel wine, it was even served at the Spanish Royal Wedding. This traditional local recipe is served in many local restaurants and is scrumptious!
We are Debbie and Andy Wilkes, we both love to travel. I’m passionate about colours and fabrics, particularly saris. I love to wander round the souks of Morocco although I'm also very happy in the John Lewis cushion department. Andy is a foodie and is in charge of the food buying for the shop, and usually making dinner too. We’ve added 3 cats to the family since moving here, one that adopted us and one came out of a bin at a few hours old and had to be bottle fed every 2 hours.
