Chicken in Cómpeta Wine
Cómpeta is famous for its sweet muscatel wine, it was even served at the Spanish Royal Wedding. This traditional local recipe is served in many local restaurants and is scrumptious!
4 fillets of chicken cut into large pieces
Large glass of sweet wine from Cómpeta
A handful of raisins
250 ml. single cream
1 large onion
2 -3 large sliced mushrooms (optional)
Salt, pepper,
Olive oil
2 Bay leaves
2 Large garlic cloves
Preparation:
Put the olive oil in a pan and brown the seasoned chicken on both sides.
Add the bay leaves and onion and garlic and cook until browned, add the mushrooms, cook for a few minutes or until the chicken is cooked through
Add the wine, and cook for a further few minutes
Remove the bay leaves
Add the raisins and cream and stir until the sauce thickens
Serve hot accompanied by fried potatoes or cooked rice
