This potato side dish goes with pretty much anything. Bursting with flavour and – if you want – chilli heat. We often make them to go with the Mushroom and Courgette Gratin recipe also in our recipe section. Best made with floury potatoes such as Desiree, Estima, King Edward or Maris Piper.
800g of potatoes cut into large pieces
4 shallots cut in half lengthways
1 teaspoon of dried chili flakes
4 tablespoons of vegetable or sunflower oil
½ teaspoon of cayenne pepper
1 teaspoon of ground cumin
1 teaspoon of ground turmeric
2 teaspoons of sea salt flakes
1 crushed garlic bulb or 1 teaspoon of garlic puree
2 large handfuls of spinach
½ 125ml pot of natural yoghurt
Fresh coriander leaves
Boil the potatoes in a large pan of boiling salted water for about 15 minutes until almost tender. Drain well and put into a bowl. Add the peeled sliced shallots and toss with the chilli flakes, cayenne, garlic, cumin and turmeric to coat well.
Add the sea salt and oil, ensure each potato and shallot half is coated with the oil then pour into a roasting tin. Bake at 200ºC/Gas 6 until they are crispy.
Wash the spinach and wilt in a pan with a little water. You could use frozen spinach if more convenient. Drain the spinach once wilted/defrosted and scatter over the cooked potatoes. Randomly drizzle the yoghurt over the top and finish off by sprinkling over torn coriander leaves.
