This recipe started off as saag paneer (spinach with paneer cheese) but I removed the cheese to make it healthier and think it is tasty enough as it is. This Indian dish can be used as an accompaniment to curry or served as a main course with rice and / or naan bread.
Cumin seeds 1 heaped tsp
Oil x 1 tbsp
Onion x 1 finely chopped
Garlic x 2 cloves crushed
Turmeric x 1 tsp
Veg stock 1/4 pint
Medium size tomatoes x 3 chopped into small pieces
Tom puree x 1 tbsp
Fenugreek leaves dried x 1 heaped tablespoon
Spinach 1/2 bag of frozen (whole leaf) or 1 bag of fresh
Black pepper x 1/2 tsp
salt to taste
Defrost the spinach or wilt with a little water if using fresh. Set aside to cool.
Gently heat oil.
Add cumin seeds and sizzle for about 1 min.
Add onions and cook until soft. Add garlic and cook for 2 minutes more.
Put in Turmeric and mix well before adding the stock. Cook for 2 minutes.
Add the chopped tomatoes, the tomato puree and fenugreek and stir. Cook for 3 or 4 minutes.
Drain cooled spinach and squeeze out as much water as you can. Chop with scissors and add to the pan. Mix well and cook for at least 5 minutes over a low heat ensuring the spinach mixture does not start to burn.
Season to taste and remove from heat.
Alternatives – some cream or Greek yoghurt can be added at the end. Simply mix in well and heat through.
