Grilled Duck with Redcurrant Sauce
This rich and tasty recipe is relatively easy and is one which will convince your friends or family that you have been toiling in the kitchen for hours.
4 to 6 whole duck breasts
Marinade:
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
200ml dry red wine
Add the duck breasts, turning to coat all sides to coat and then place in a refrigerator for at least 4 hours or overnight.
Redcurrant Sauce:
60g unsalted butter
1 small jar red currant jelly
4 tablespoons tomato ketchup
60g brown sugar, packed
Melt the butter in a small sauce pan. Stir in the jelly, ketchup and brown sugar. Heat until the jelly melts and the mixture boils (is has to boil). Grill the breasts for 5 minutes per side. Meat should be rare to medium rare. Carve into 1/4 inch slices, cutting across grain. Serve with the redcurrant sauce and vegetables of your choice. Serves 4 to 6.
