A really interesting dish flavour-wise; with basil, mozzerella and mushrooms what more do you need? This is probably one of the most frequently cooked recipes in our house.
2 courgettes sliced into 2cm thick rounds
3 large knobs of butter
300g mushrooms, sliced thickly
Black pepper freshly ground
15g basil leaves chopped
1 ball of mozzarella – preferably buffalo
500ml béchamel sauce (ready made or homemade)
3 tablespoons parmesan cheese for dusting
Place some butter into a frying pan and and heat until it bubbles then add a layer of sliced courgettes and cook on both sides for a couple of minutes to brown. Repeat with more butter and courgettes until all or browned.
In the same frying pan add the rest of the butter and the sliced mushrooms. Season with salt and black pepper and cook until soft. Then add the basil, mix and remove from the heat.
In a large shallow baking dish – a Spanish terracotta cazuela is ideal – add a layer of the courgettes and mushrooms. Rip the ball of mozzarella into pieces and and place them equally over the vegetables.
Spoon over the béchamel and then add anoher layer of the courgettes and mushrooms. Season once again. Dust the top generously with the parmesan and bake for about 40 minutes at 200ºC/Gas 6 until the sauce bubbles and the top has browned gently.
