Yuk Sung Recipe
Yuk Sung is one of my favourite Chinese restaurant starters. A healthy and flavoursome dish served wrapped in lettuce leaves. The original dish uses minced pork but you can use minced chicken, Quorn mince or Soya mince as you wish.
Ingredients
1 iceberg lettuce
1 tablespoon of sesame oil
2 garlic cloves finely chopped
3cm of fresh ginger – peeled and sliced finely
2 spring onions, finely sliced
500g of minced pork, chicken, Quorn or soya mince rehydrated
220g can of water chestnuts chopped into very small pieces
1 stick of celery, finely chopped
1 tablespoon of dark say sauce
2 tablespoons of oyster sauce
1 tablespoon of rice wine of sherry
1 tablespoon of sugar
Separate the lettuce leaves trying to keep them intact.
Gently heat the sesame oil in a wok or frying pan. Add the garlic, ginger and spring onions and fry until the ginger and garlic are aromatic.
Add the mince and cook until browned or if using a vegetarian option until mixed with ginger and garlic and heated through. Remove from the pan and set aside.
In a small bowl mix the soy sauce, oyster sauce rice wine/sherry and sugar.
Into the still warm frying pan add the water chestnuts and celery and cook over a medium heat for 3 to 5 minutes or until slightly browned. Add the soy sauce mixture and mix in well.
Put the mince mixture back into the pan and cook over a medium heat until the sauce is reduced and the mixture is quite dry.
To serve spoon some of the Yuk Sung into a lettuce leave, wrap and eat!
